Bruschetta Salmon
A delicious twist on the classic Italian appetizer!
Pressed for time? This recipe will allow you to have dinner ready in under 30 minutes! This is such an easy and TASTY recipe that you and your family will absolutely love!

INGREDIENTS:
1.5 tbsp organic ghee melted
1 whole Atlantic salmon fillet cut into 4-5 slices
1/2 red onion finely chopped
2-3 cloves of garlic finely chopped
2 cups cherry or grape tomatoes diced
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1/4 cup finely chopped basil or celery leaves (this recipe used celery leaves and is a great alternative to basil!)
1/4 tsp pink Himalayan salt
pinch of black pepper

INSTRUCTIONS:
Set oven to 350 degrees Fahrenheit.
While oven is heating up, dice and chop red onion, garlic, tomatoes, and basil. Combine in a bowl, and then add the olive oil, balsamic vinegar, salt & pepper. Stir and let sit.
Line a baking sheet with parchment paper, and place salmon fillet slices on top. Space them out about 1cm apart. Brush melted ghee on top of fillets.
When oven reaches 350, place salmon on a lower rack and bake for 17-20 minutes (depending on your oven).
After salmon is cooked, take it out of the oven and spoon the bruschetta mixture over top. Make sure the entire salmon fillet is covered.
Put salmon back into the oven and broil on low for 3-5 minutes until the bruschetta mixture starts to soften.
Serve with freshly cooked jasmine rice. This recipe makes 4-5 servings depending on the size of the salmon fillet. Enjoy!
